LASARTE opened its doors in 2006, a year later it received its first Michelin star, in 2010 its second, and 2017 brought the third star, which made it the first restaurant in Barcelona to receive three Michelin stars.
IN THE HEART OF BARCELONA
LASARTE is located in the luxurious Monument Hotel on the famous Paseo de Gracia, Barcelona’s main shopping street, and is the hallmark of the hotel. After the reconstruction, the new LASARTE restaurant has become even more modern, spacious and bright.
The renovation of the restaurant was led by the architects Carles Bassó, Tote Moreno and Oscar Tusquets, who also worked with Mercè Borrell on the interior decoration. The emphasis is made on light, oak-dominated textures and furnishings that give the restaurant its own unique identity.
The restaurant has a main dining room and an 8-seat Chef’s Table located above the kitchen, where a glass wall allows guests to follow the creation of gastronomic masterpieces.

The acclaimed Martín Berasategui is deservingly called one of the best chefs in the world and has 12 Michelin stars — more than any other Spanish chef.
LASARTE brings together the flavors and aromas of its native Basque region, while modern and sophisticated cuisine bears its innovative character, which manifests itself both in À la carte menu and in the tasting menus.

Paolo Casagrande — the brand chef of the restaurant — who with his inherent Italian temperament combines the signature classics of Martín Berasategui with innovative dishes specially created for LASARTE. His main distinguishing features are commitment and love for his craft, perseverance, effort and passion for cooking.
“I have been passionate about cuisine since early childhood, so I had no doubt that I would become a chef, — says Paolo Casagrande. — When I graduated from Alfredo Beltrame Hospitality School in Vittorio in northern Italy, I worked in numerous restaurants in Italy to discover new techniques, discipline and creativity in the culinary world. I then perfected my culinary skills at prestigious gourmet restaurants in Milan, London and Paris with world renowned chefs. Working under the leadership of Martín Berasategu, I have always admired his gastronomic creativity and tried to learn from his experience. Leading the kitchen of his restaurant in the Canary Islands, I got my first Michelin star, which I was truly proud of.
In 2016 I moved to Barcelona, which has become my second home, where I have been given the great honor of leading LASARTE.”
The main goal of Paolo is to create an unforgettable gastronomic experience by showing the best products offered by nature, the sea and the seasons. His dishes are a symbiosis between aromas and tastes.
To whet your appetite, the tasting begins with Small bites and complimented with glass of wine or champagne.

In the pause between courses a Bread cart with fresh pastries arrives to the table.
Selected bread is served with several types of butter and signature Lasarte Extra Virgin Olive Oil. Throughout the whole dinner bread could be repeatedly served upon guest’s request.
- Squid tartare with liquid egg yolk, onion and kaffir consommé
- Scarlet Shrimp soup, tomato, celery and green apple
- Warm crustacean salad on a seabed, Sherry and coral mayonnaise
“We strive to create the best impressions and emotions for our guests, we want to convey respect and love for the nature around us and its gifts in every dish, — continues Paolo. — Dishes change depending on the season and are almost never repeated, even if something from the old menu is preserved, it appears with new adjustments. The main recipe for our success is quite simple — to work with pleasure, intelligence and enthusiasm, to feel the products and present their most original combinations that will excite, pamper and delight. We approach each dish with great responsibility and trepidation, while our sommelier is consistently developing an excellent wine pair.”

The final part of the dinner is represented by 2 contrasting desserts and a compliment from the chef in the form of miniature sweets.
