This contemporary fine dining haven draws inspiration from the vibrant flavors and intoxicating aromas of Latin America, pairing each dish with rare and exquisite wines in a warm, inviting atmosphere. The name Z’SOM is derived from the Tyrolean word zusammen, meaning “together,” reflecting the restaurant’s ethos of unity, community, and shared joy. This spirit radiates through every plate, every glass, and every smile.

Austrian-Chilean duo Judith Lergetporer and Diego Briones founded Z’SOM in April 2022, bringing with them two decades of globe-trotting culinary exploration. Within just three years, Z’SOM achieved a milestone few could dream of: its first Michelin Star in 2025, making it the only Latin American-inspired Michelin restaurant in Central Europe. It also proudly holds 3 Gault Millau Toques and 3 Falstaff Forks.

Judith and Diego’s vision was inspired by two decades of travel across continents, where they absorbed the diverse culinary traditions of Latin America, Europe, and Asia. Their goal: to offer an experience where every plate and glass reflects warmth, authenticity, and artistry.

Passion and Precision

At the heart of Z’SOM’s kitchen is Chef Diego Briones, one of only five Chilean chefs worldwide to hold a Michelin star. Ranked among Austria’s top 100 chefs, Diego’s culinary journey spans 15 years and six continents, from Chile and Peru to Canada, Spain, China, the Philippines, and France.

His formal training at the Basque Culinary Center in San Sebastián honed his knack for blending traditional techniques with modern innovation. Professional stints include executive chef at Estado Puro by Paco Roncero in Shanghai and consultancy work in Paris, as well as experience at acclaimed restaurants like AT Paris and Dani García in Marbella.

Diego’s cooking philosophy is rooted in respect for ingredients, playful exploration of textures, and a devotion to his Latin American roots. Each dish he creates tells a story — unexpected, soulful, and meticulously crafted.

Meanwhile, Judith Lergetporer, Z’SOM’s restaurant manager and sommelier, curates the wine program with equal artistry. Originally from Tyrol, Judith’s passion for hospitality flourished during her 20 years living abroad in countries including the United States, Morocco, Japan, and France. It was in Paris that she fell in love with winemaking, trained, and became a certified sommelier.
