DIFFERENCE COFFEE: Revolution of Capsule Coffee

There’s a lot of misconception about coffee capsules, partly due to ignorance, partly due to bad experiencing. But is it so? After all, the taste of coffee comes from the beans themselves, not from the machine — exactly what DIFFERENCE COFFEE perfectly proves.

DIFFERENCE COFFEE is an English brand that has achieved the perfect taste of coffee in capsules thanks to the use of excellent raw materials and special roasting methods, while each capsule has its own special character: a unique symphony of flavors and aromas.

All coffee used in DIFFERENCE COFFEE is purchased at auctions or directly from the legendary coffee estates, where unique terroirs combined with exceptional farming methods produce the finest beans. The art of roasting also plays an important role.

Just as a chef creates exceptional flavors from the ingredients of his choice, the Master Roaster extracts flavors and aromas by tailoring the optimal roast profile for each coffee variety to bring out its sweetness while balancing its other two attributes: bitterness and acidity.

“DIFFERENCE COFFEE was really a bit of an accident waiting to happen. Until 2014, I wasn’t a coffee drinker, in fact, I was a tea drinker. My experience with coffee was a bitter one. It tasted really burnt to me. However, my wife made us buy a Nespresso machine for our home and I took it as an opportunity to explore the world of coffee further, — says Amir Gehl. — I’ve tried every capsule Nespresso makes and settled on a few. I added sugar to them to balance out the bitterness, but over time the flavor got stronger for me. I started ordering coffee while dining out and to my surprise, the coffee I was served often tasted worse than the one I made at home with capsules, which didn’t make any sense at the time. Be that as it may, one day I became interested in finding out about rare varieties of coffee — Jamaica Blue Mountain, Kona, Kopi Luwak etc. No one offered this coffee in capsules, so I decided to buy empty capsules, ground coffee in Harrods and make his home. The taste was really addictive and I wanted to enjoy it regularly. I knew there must be other crazy people like me, so that’s how the idea was born”.

It’s got lovely acidity on the one hand, which brings life to the cup, and a hint of citrus notes with plenty of dark chocolate. HAWAII KONA (Hawaii) — Kona coffee is one of the rarest, highest-quality and most delicious varieties of coffee grown anywhere in the world. Only beans grown in the Kona Coffee Belt, a narrow stretch of land on the lush, volcanic slopes of Hawaii’s Big Island, can be called “Kona Coffee”. The coffee that thrives in this glorious part of the Caribbean has been celebrated for centuries for its mellow, chocolatey flavour. Smooth and beautifully balanced, Jamaican Blue Mountain coffee consistently ranks among the best (and priciest) in the world.

WILD KOPI LUWAK (Indonesia) — is known among connoisseurs as the most expensive coffee in the world. This almost legendary coffee earns that title thanks to its truly unique origins, which most famously involve being partially digested by civet cats (luwaks). Due to the civets’ excellent health and diet, the beans passing through their systems result in exceptional flavour.
It is a truly outstanding coffee that is not delicate, complex and delicious because it is made just the way nature intended.

Amir Gehl: “I think coffee is ultimately an ingredient that is used both in cooking and as a beverage on its own. Imagine any restaurant that does not offer coffee at the end of the meal, it will seem strange to us, right? So coffee is definitely a strong and important element of gastronomy. This is the last taste that the visitor will try before leaving the restaurant — something that can decide or ruin the entire meal. If the taste of coffee is important to you, choose Specialty Grade coffee. It doesn’t need to be the most expensive coffee in the world, it doesn’t need to be the rarest to be enjoyable. That said, when you do wish to taste the 1% of the top 1%, do come and visit us”.
