HARVEST: Kingdom of Vegetables

HARVEST whose significance is harvesting, perfectly characterizes the philosophy and features of the restaurant, where the main focus is made on vegetables — not only in the main dishes, but also in the preparation of desserts and drinks, as well as in signature cocktails.

HARVEST is one of the projects of the most famous St. Petersburg restaurateurs Dmitry Blinov and Renat Malikov (Tartarbar, DUO Gastrobar, Duo Asia, Récolte).

HARVEST restaurant was opened in December of 2018 on Dobrolyubova Avenue in St. Petersburg and became the first restaurant in the city with a special attitude towards vegetables. Despite the fact that vegetables are the main idea of the restaurant, this does not mean that the restaurant is vegetarian. More than half of the restaurant’s menu is occupied by vegetable dishes, but the meaning is different.

Harvest

Working with potatoes, beets, pumpkins, broccoli and cabbage is not an attempt to replace meat and fish, it’s just an opportunity to show that vegetables in a gastronomic sense are completely self-sufficient and can be the basis of a dish playing the leading roles in the kitchen.

Harvest

A lot of attention in HARVEST is placed on the idea of zero waste and making the most of every part of product, not cutting out only the best part of it and throwing out the rest. In the process of developing this idea, the restaurant team came up with the concept of reasonable consumption and has already implemented it in other friendly restaurants.

In continuation of this Eco-friendly idea, natural materials prevail in the interior of the restaurant. It’s spacious and emphatically minimalistic, but at the same time very elegant and bright thanks to large windows and the chosen color scheme: sand shades, light wood, milky white textiles.
Attention is drawn to the spacious open kitchen made of wood and the spiral staircase leading to the second floor, where another project by Blinov and Malikov called Récolte is located.

Harvest

Furniture — armchairs, tables, chairs and sofas — made of travertine and oak, which designer Aleksey Penyuk found from the Bosnian furniture makers Artisan. The uniform of the waiters, reminiscent of antique tunics, was created especially for the project by St. Petersburg designer Nelli Nedre.

Taking a first look at the HARVEST menu, it’s easy to notice that Starters and Main dishes are divided into two subsections: “Only vegetables” and “Not only vegetables”. But reading the names of the dishes from both columns, you feel who’s the “King” here.

Bread, which is daily different, also made with the addition of vegetables: it can be cabbage, onions, carrots or whatever you can find in the kitchen (this is where zero-waste production comes in handy). The bread is served with whipped butter.
