Mauro Colagreco’s journey to the top of the culinary world spans continents. Born in Argentina, the acclaimed chef built his reputation on the French Riviera, where his restaurant Mirazur has earned three Michelin stars. Known for an obsessive pursuit of flavor and a commitment to sustainability, Colagreco has also been recognized as a UNESCO Goodwill Ambassador for Biodiversity.

At the core of his philosophy is a deep respect for local ingredients. That approach now extends to London, where he helms the signature restaurant at The OWO in Raffles. To craft the menu, Colagreco and his team spent years sourcing suppliers across the UK, ultimately assembling a lineup that highlights more than 70 varieties of fruits and vegetables native to the British Isles. The result is a celebration of seasonal British produce, presented with the same artistry and precision that defines his work at Mirazur.

Leonel Aguirre, a rising culinary talent, now helms the kitchen of the London restaurant. The ambitious young chef brings a wealth of international experience, having honed his skills at renowned establishments across the globe. Aguirre’s journey began over a decade ago in Argentina at Tegui, one of the country’s premier fine dining restaurants. His career then took him to France, where he worked at the celebrated Mirazur, before expanding his global footprint with stints in Singapore as sous chef at Mirazur by Mandala Club.

Before arriving in London, Aguirre sharpened his craft in Dubai, cooking at One & Only Royal Mirage and Beach Bar & Grill by Mauro Colagreco. His career also includes high-profile appearances at international events such as the 2018 IKRA Fest, the 2017 Davis Cup, and Prada Fashion Week in 2016.

Long before arriving in London, our experience at Mauro Colagreco had been scheduled, and anticipation grew steadily as the lunch approached.

Chef Mauro Colagreco has built his culinary philosophy around a deep respect for the land and environmental stewardship. His kitchens rely on ingredients sourced in close collaboration with local farmers and suppliers, who share his commitment to preserving the soil and its yields. Sustainability is central to his approach, from ethical sourcing practices to the use of biodegradable packaging.

The menu at Mauro Colagreco London is a study in restraint and seasonality, offering a fleeting glimpse into the natural world through its aromas, flavors, and textures. Each dish is crafted with meticulous attention to detail, delivering subtlety and elegance on every plate.

On our visit, Chef Leonel Aguirre guided us through the seven-course LAND AND SEA tasting menu (£205). Throughout the experience, Aguirre shared stories of each ingredient and its origins, enriching the meal with a narrative of local sourcing and culinary craftsmanship.

From the moment the gleaming trolley rolled into view, it was clear this was a cheese course designed to impress. A curated array of exceptional cheeses, each chosen for its peak flavor, offered a journey through rich textures and complex notes. Seasonal condiments — bright chutneys, tangy pickles, and fresh fruits — provided perfect counterpoints, while crisp crackers completed the tableau.

At £30, this indulgent finale transformed a simple after-dinner tradition into a feature-worthy dining experience.
