ÖFFERL: More Than Just Bread

Based in Gaubicz, Lower Austria, the ÖFFERL bread-making concept has evolved over the past few years from a small bakery into a multi-faceted team of professionals with five branches and a corporate philosophy based on a steady pursuit of the highest quality from grain to crumb — carefully selected raw materials and production with soul and character.

ÖFFERL is a third generation family business run by Georg Öfferl.

It doesn’t start with the question of whether bread is made by hand or mechanically. It doesn’t start with the oven, or the recipe, or even the original dough. At the forefront are passionate farmers with enormous vitality and the soil in which they grow the grain. This is the basis for making delicious and healthy bread.

“Real bread starts with the quality of the grain and our partners, — say Öfferl representatives— It is important to us that our partners match our philosophy. And the most important thing is time: all our breads are given 48 hours to rest before they are baked in the stone oven. Each bread in our range has its own name and character — this was the idea of Georg Offerl. He wants each type to be unique, so each bread has its own story. He wants our customers to be able to try different breads. This idea came from winemakers who describe each type of wine, so Georg took the time to describe each bread — what it smells like, looks like and where the grain comes from.”

BREAD “SENSUAL”

Madame Crousto — Mixed Wheat Bread,
with delicate sourness and delicate sweetness and a particularly crispy crust. It has a little sister, Mademoiselle Crousto, a bread made in her image, only in a smaller size. With a velvety brown crumb and a slightly sour taste, also sweet. Its subtle aroma is almost inviting. It was as if she had come straight from Provence.

BREAD “DELICATE”

Robert de Vino – Sunflower-Walnut-Bread
Can be good on his own. Just as well in company. A favourite with wine. An earthy companion who brings joy to the table.

Besides several Bakeries in Vienna, ÖFFERL also has two Bistros — located on Landstraße and Wollzeile, where you can taste the entire bakery range, as well as enjoy excellent breakfasts and lunches with the best organic ingredients for a great meal.

The fine beans are sourced from biodynamic partner companies in Guatemala.
