Thanks to an ancient traditional method, Amedei turns the rarest cocoa beans in the world into true chocolate masterpieces.
“The business started in 1990 in a small workshop in Pontedera of 45 square metres and one employee, producing only pralines. Eight years later Toscano Black 70 was born, Amedei’s very first creation. From August 2017 is part of Ferrarelle SpA, with the aim of enriching its brand portfolio with high quality food&beverage products, consecrating Amedei as a symbol of «Made in Italy» excellence in the world of high-level artisan chocolate. Today Amedei employs around 30 people and produces no less than 150 chocolate creations that are exported to 30 countries and counts 92 awards and recognitions at international level”, — says one of the Amedei representatives.
Amedei’s philosophy is based on the complete control of the production chain, from the seed to the chocolate bar. Artisanal techniques, inimitable taste and a unique style, all made in Tuscany, are the distinctive features that make Amedei’s chocolate renowned all over the world.
With a short recipe and without the use of artificial flavors, colorings or preservatives, Amedei chocolate is made only with raw materials of excellent quality, fine aromatic cocoa beans (such as Criollo and Trinitario, which are able to naturally release more than 100 aromatic notes) and the best Italian dried fruit (pistachios from Bronte and Avola almonds, hazelnuts from Piedmont) processed with an ancient artisan method.
“It all starts with the selection of the finest cocoa beans from the world’s most hidden and remote plantations in countries such as Madagascar, Venezuela, Jamaica, Ecuador, the Caribbean islands of Trinidad and Grenada and wherever varieties are grown that have retained the structural and aromatic characteristics of the territory to which they belong. The continues with the creativity of the recipes and is finally completed in the laboratory, dosing and expertly handcrafting the highest quality ingredients. Amedei creates harmony between ingredients, textures and flavors, producing chocolates with unique aroma profiles”, — continues telling the company representative.
For Amedei the most iconic line is Toscano Black range (63,70 and 90): the “Manifesto”. Dark chocolates from Amedei, obtained from a blend of Trinitario and Criollo with different percentages of cocoa.
Toscano Black 70 is a natural born protagonist, surprise at first bite: a powerful structured flavor that bursts in after a delicate start and its aromatic profile embraces notes of tobacco, roasted malt and cedar wood. Toscano Black 90 is characterized by a delicate and inviting fragrance. Extra dark, but with a twist: despite the high cocoa percentage, Toscano Black is a very creamy chocolate that leaves the palate extremely clean, with notes of toasted bread, white flowers and hot chocolate.
Toscano Brown — the founding member of Amedei’s milk chocolate family. An ode to childhood memories obtained from an exclusive milk blend. The creamy, vanilla-ish flavour of milk and cream is made extra memorable by a fabulously rich taste.
Toscano White — Pure and delicate white chocolate with with hints of honey and vanilla that anticipate the velvety Flavour of fresh milk.
Le Praline 25 — Amedei approaches the creation of these small gems with the same idea that makes its chocolate so special. Attending to the cocoa beans, fruits, liquorice and rhubarb immediately, with the experience of one who knows that the freshest ingredients need to be processed quickly to fully retain their incredible quality.
White chocolate with pistachios — The red, white and green of the Italian flag come together in a bold chocolate statement: white chocolate, fine green pistachios from Bronte and the red of our constant passion, combined to design a completely unexpected flavour.
Toscano Red — The extraordinary relationship between fruit and a true chocolate of character. The touch of an artist: red fruits on a dark chocolate canvas. Dehydrated strawberries, cherries and raspberries, known for their refreshing and antioxidant properties, thanks to Vitamin C, potassium and phosphorus.
Milk chocolate with Langhe Hazelnuts — A true classic. A chocolate bar for the most demanding sweet-tooth. The best “Tonda Gentile Trilobata” Hazelnuts, embedded in sublime milk chocolate.
Selection i cru — 12 Napolitains — exclusively single-origin chocolates, which take you to explore various plantations around the world discovering the nuances that make each one stand out from the others.
Porcelana is a pure-bred “Criollo” cocoa, of which only 3,000 kilos is made a year. Amedei has the honour of growing it, making it into an incredible flavour, among the most aromatic, well-rounded and harmonious found in the book of chocolate.
Chuao — it was a true challenge for Amedei: difficult to purchase and process, this wild bean needed to be “tamed” as no-one had ever tasted it in its pure form. After an aging period of 20 days, this chocolate – unlike any other – keeps developing its taste, improving its acidity and aroma.
Acero 95 — 95% dark chocolate with a bold, sweet flavour, where cane sugar is substituted with maple sugar: a high-quality innovative ingredient obtained from the sap extracted from Canadian maple plants.
Prendimé 3 layers of Gianduja — 150 grams of three layers of Gianduja chocolate exquisitely Amedei. Gianduja, a chocolate whose history stretches back to the dawn of the 19th century, is the meeting of the purest cocoa, cane sugar, and large hazelnuts of the Tonda Gentile Trilobata variety.
Specially popular is Spread Chocolate: The Cocoa Crema Toscano is the first spread chocolate created by Amedei dairy free. The fine blend of pure cocoa beans selected on plantations, love and experitise.
Spread Chocolate Hazelnut taste is made with the finest quality ingredients that always distinguish Amedei creations. A expolsion of hazelnuts skilfully roasted in an embrace of pure cocoa beans.
