INSIDER Bar is part of the new project LILA of GT. restaurant holding, founded by its owners and partners Galaktion and Elina Tabidze.
Innovations + Nature
INSIDER Bar space consists of the bar itself as well as the INSIDER Lab, which is unique for Russia. The Bar is headed by Vladimir Mayakov and Andrey Bolshakov, who have extensive experience in the field of bartending art.
Especially for INSIDER Bar, the Norwegian Design Studio “Behind Bars” has developed a bar station that has no analogues in the world: it’s located in the center of the bar and does not block bartenders from guests, thereby creating an atmosphere that is even more conducive to communication. Each guest has the opportunity to take a seat at the station and be part of the beverage creation process.
INSIDER Lab is located behind a glass wall, where the team uses modern techniques to create new flavors and aromas for cocktails. The laboratory uses the principle of zero waste — soap, candles and other aromatic and cosmetic elements for the bar are subsequently created from waste.
“We have not only equipped the bar with the most modern bar laboratory, where we create unique tastes and aromas using the latest equipment”, — says bartender Andrey Bolshakov, “but with the scrupulousness inherent in our bartenders we have developed our own approach to detailed quality elaboration of each drink”.
The creators of INSIDER Bar themselves consider it “a fantasy about our future, how we see it and where we are striving”.
Innovation, responsible consumption and hospitality are reflected in every element — in the approach to work, in the interior, in the drinks.
“The entire space of the bar is a powerful combination of not only visual effects, but also philosophy and history about the careful attitude to resources, the value and honesty of the materials used”, — continues Andrey.
The walls of the bar are made of various compacted earth rocks, the tectonics of the ceiling imitates the relief, continuing the plot of the Earth and environmental friendliness. Centipede tables create a sense of something alive, with latent energy and work in contrast to the fundamental and persistent island in the center. They complete the look of the interior, giving it a futuristic spirit.
Inside Baccarat
INSIDER Bar considers an interactive cocktail menu one of its most important elements, created in collaboration with the French crystal manufacturer Baccarat — an icon of luxury since 1764. Each piece is handcrafted and maintains the perfect balance of historic classics and contemporary style.
The menu includes 4 drinks, inspired by the classic Negroni recipe, which is also reinterpreted and continues the theme of ecology and nature.
TRUFFLE NEGRONI — Courvoisier VS, Cocchi Barolo, Cocchi di Torino, Martini Bitter, Truffle, Sandalwood
PISTACHIO BOULEVARDIER — Makers Mark, Carpano Rosso, Martini Bitter, Pistachio
PATCHOULI NEGRONI — Roku Gin, Cocchi Rosa, Cocchi Americano, Martini Bitter, Patchouli, Coconut Water
LOOMI NEGRONI — Loomi, Angelica, Makaw Pepper, Suze, Fino Sherry, Cocchi Americano
Each cocktail reflects one of the elements: earth, water, air and fire — the elements that are necessary to create Baccarat crystal.
A special bar cart, or Baccarat Trolley, allows you to serve a cocktail to a guest anywhere in the bar. The INSIDER Bar team, together with Behind Bars, revisited the classic design, which has not changed since its inception, and offered their own version of the “future”, delicately combining it with the recognizable Baccarat branding.
During the serving, the bartender invites the guest to choose individual elements for the drink and the shape of the glass from the classic collections of the brand: Harcourt, Harmonie, Mille Nuits and Massena.
Finally, ice is added to each cocktail with engraving the Baccarat logo. Thanks to the special preparation technique and the skill of the team, all drinks have an ideal concentration and temperature.
The price of each drink is 1300 rub.
