KONTRAST: Mikael Svensson’s Dream Project

KONTRAST, with its contemporary Scandinavian gourmet cuisine and the main goal of offering world-class organic and ethical ingredients from Norway, as well as showcasing the farmers who produce them, is more than a restaurant — it’s a big dream that came true.

In 2016, the KONTRAST restaurant was awarded a Michelin star.

KONTRAST is located in one of Oslo’s most innovative and lively Vulcan districts, where the industrial style and austere interiors contrast with the exemplary dishes prepared in the restaurant’s open kitchen.

Mikael was born and raised in Skåne, in the countryside of farmers and open landscapes. His culinary career began at the Chef School in Kristianstad and then continued through various internships at Skåne where he discovered his love for high quality local produce.

“Childhood memories have shaped my culinary profile. I used to spend my childhood away from the city, in close connection with nature, — says Mikael. — After Skåne, my career continued in Oslo, at Le Canard in the early 2000s. Then I worked in Europe in several restaurants with one, two and three Michelin stars, in the famous Spanish restaurants Quique Dacosta and Martin Berasategui. Back in Oslo, I worked hard, participated in the opening of new restaurants, and then it was time to open my own project in order to have complete freedom.”

For instance, if someone has blind degustation of our dishes, he won’t be mistaken they are created by Kontrast. We’re not making repetitions, it’s always something new on the menu, but still with bold Kontrast character in flavor combinations, techniques. And Kontrast in between different courses on the menu.”
